Anyone know the part number or the source for the instrument lights dimmer switch?

You can use a standard Lucas rheostat switch: https://www.autoelectricsupplies.co.uk/product/815/category/153 (https://www.autoelectricsupplies.co.uk/product/815/category/153) Take the first one, the second one is used for speed controlling of the heater. They differ in the maximal resistance.
